Because I, your humble pastor, have only the capability of making toast, that is the "dish" I had intended to prepare for you. The members of our Pastoral Council, however, when they heard of this plan, convinced me to up my game. In fact, they enlisted the services of council member Maria Englot to TEACH me to cook. Maria and I - well, mostly Maria - made one of her favorite dishes: pesce al sugo, or fish in sauce. We used the family recipe Maria brought here from Italy and chose to prepare this dish with fresh haddock, but your favorite fish filet also will work perfectly well. During this process, Maria scolded me a bit about presentation. I learned a few important lessons, one being that this type of fish should not be served in any old 9x13 baking dish. So when you check out our photos, please focus on those that feature Maria's much nicer plating and try to get past that boring baking dish. The most important thing to know is that the elements of this dish - onions, garlic and more - smell delicious while coming together. We highly recommend this for your Lenten lineup!
